A Rural Journal: {Amish Chilly Day Soup Recipe}


I found this soup recipe in a book I'm currently reading, 
An Amish Kitchen, which, along with three short stories, 
also contains 45 Old Order Amish Recipes.

It looked to be a hearty soup that would warm us up on a windy February day in Nebraska.

The fact that I had all of the ingredients was also a major selling point. 
(I mean, who in their right mind goes grocery shopping on a Saturday?)

Amish Chilly Day Soup Recipe

1 large carrot, chopped
2 cups water
1 large onion, chopped
4 medium potatoes, peeled and diced
1/3 cup macaroni
1 tsp. salt
1/4 tsp. pepper
water enough to cover
1 pint cream (or 2 cups milk + 2 Tbs butter)
1 cup cooked meat (optional)

Add carrots to 2 cups water and cook until carrot is tender.

Add remaining ingredients in order given , except cream and meat. Add enough water to cover.

Bring to a boil then reduce heat and cook slowly until all ingredients are tender (about 15-20 minutes.)

Add cream and meat. Mix well. Heat thoroughly, but do not boil.

 Serve with croutons, crackers, or hot toast.

  10. This sounds like a winner! I made 2 pots of homemade chicken soup yesterday and froze most of it. I'll think I'll have to add this and I'll be set for the rest of the winter!

  11. It sounds and looks delicious. I am fascinated with Amish books but have never sought out a cook book. I think one of my Amish Christmas stories might have a recipe or two - might have to dig that one out.

  12. Mmm, that sounds good and I could easily substitute a couple of ingredients to make it gluten-free.

    Oh, and I love anything Amish! Are there any Amish communities in Nebraska that you know of?

  13. Yum! This sounds delicious. I love soup so I'll be trying this out, I just won't tell my doctor who wants me to cut way back on the carbs. A girl's gotta eat something good once in a while. :)

  18. What meat do you suggest to go well with a Pasta Potato soup? The pic looks like beef.

    1. To be honest, I had some rib-eye steak that was getting old in the freezer and used that, but I believe any kind of beef or poultry would work.

  23. This sounds good. Cooked a whole chicken yesterday & may stock with the bones, so I have everything I need for this recipe. I may try it today, although I'm wondering about using both potatoes and pasta. Seems like a carb overload to me. I may leave out the potatoes, or maybe just shred one into the broth to add some thickening.

  25. The soup sounds good. I am in Western PA and we are having quite the wind today as well! A weather break of temps in the early 50's and tremendous wind...it feels like mid March! :)
