I have been searching for rhubarb recipes online and came across some really good ones at Gourmet.com.
This recipe for rhubarb streusel cakes caught my eye -- they looked easy to make and the ingredients -- most of us would have in the fridge or cupboard.
They taste amazing -- are moist, flavorful and the rhubarb retains just the right amount of tangy-ness that I prefer. I used Canada Red rhubarb from my garden. I would defiinitely give these a try.

ReplyDeleteTakes me back. My mother used to make a rhubarb cake with rhubarb that grew in the backyard everywhere. I wasn't fond of rhubarb pie, but the cake was wonderful.

ReplyDeleteMy mom used to make strawberry rhubarb pie. It was delicious. These streusel cakes sound equally as good! Maybe I need to find me some rhubarb :)

I have my first rhubarb coming in this year, they were planted last year from a family friend's garden, the same plants that my mom took from to plant in her garden years ago. It is amazing how long that stuff will last! My mom makes an amazing rhubarb custard pie...probably one of my favorite desserts ever!

ReplyDeleteI must be one of those weird people who does not like rhubarb...have never been able to eat it - whether disguised with strawberry, or whatever! My ex-husband's grandmother used to grow it and give us a bag every spring for a "tonic". We passed it on to other family members who liked the stuff...never telling her we didn't eat it!

ReplyDeleteMy daughter loves rhubarb and has cooked with it several times. I have never seen one or tasted it, but she adores it. She lives in Portland, far away from me, so maybe next time she visits I can coax her into cooking it for me. :)

ReplyDeleteThere is a bakery in Galt, CA...Spaans, they make a delicious rhubarb pie. So once in awhile we get that. :)
