Rural Thursday Blog Hop #14: Bacon Asparagus Fritatta



If you grow asparagus, you are likely up to your chin in spears about now. I know I am.

That's why I've been searching for recipes. For asparagus. Yummy ones.

And I know I found a keeper at a site cleverly named, The Talking Kitchen.


The bacon asparagus frittata.

I wish you could smell it's bacon-y goodness.

The great thing about this recipe, you can make it quickly for breakfast, brunch, lunch or dinner. It's really a snap.

Bacon Asparagus Frittata

 Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients (2 – 4 servings)





4 eggs
2 Tbsp milk
1 Tbsp butter
2 strips bacon
4-6 asparagus stalks
8 cherry or grape tomatoes, halved
2 green onions, sliced, greens and whites
2 Tbsp grated cheese (I used cheddar)
sprinkle salt
freshly ground black pepper



Instructions

Preheat the oven to 350 degrees.




In a medium bowl add eggs, milk, salt and pepper, mix until combined. Set aside.



Heat a medium saucepan over medium heat, add the sliced bacon. Cook until browned, remove from pan, set on paper towel, drain fat from pan and rinse pan.

Return pan to stove, spray with nonstick spray and add butter (optional.)

Add sliced onion, saute for 15-30 sec, turn off heat, add egg mixture, stir so all the onions aren’t on the bottom.



Sprinkle in bacon, tomatoes, asparagus, cheese.

Place in oven and bake for about 15 minutes or until middle isn’t jiggly and cooked through.




Considering I used home-raised eggs, garden asparagus and wild green onions -- this meal didn't put much of a dent in my food budget.

  7. I love asparagus! I hear they grow quickly and in large groups! If I were to leave out the bacon this would be delicious! But one of my favorite ways to enjoy it is grilled or broiled with lots of garlic, yum!

    My hubby loves asparagus and I've only recently come to enjoy it. We've been buying it every week so this is a timely receipe.

  45. Wow--I can't wait to try this! Yes, we're hip deep in asparagus right now too. We've done grilled, sauteed, steamed, stir-fried...we even tried just chopping it into a salad, although I wasn't impressed with that.
