Tropical Traditions Product Review and Giveaway

Ultimate Sugar Cookie Pops made with Tropical Traditions coconut oil. 
Much to my delight, I recently received a 32-ounce jar of Tropical Traditions Gold Label Virgin Coconut Oil to test and review.



Although I initially thought of making soap with it, I realized that cooking and baking would be a much better use of this awesome product.

As I did last year about this time, I decided to make a batch of my Ultimate Sugar Cookies with Royal Icing -- only this time, I wanted to make cookie pops -- like the popular homemakers do -- only with my own frugal twist.

Instead of using the usual cookie treat sticks ($2.99/20 @ Wilton.com,) I dipped into my Popsicle stick stash. What? Doesn't everyone have one of those? Well, you should!



Here's the recipe for the cookies, made with Tropical Traditions Gold Label Virgin Coconut Oil.


Ingredients:

3/4 cup Golden Crisco, Butter-flavored Crisco or regular shortening
2 TBS  Tropical Traditions Gold Label Virgin Coconut Oil
1 cup granulated sugar
2 eggs
1 tsp vanilla
2-1/4 cups all-purpose flour
1-1/2 tsp baking powder
1/4 tsp salt
Coloured decorations or icing

Cream Crisco, coconut oil, sugar, eggs and vanilla in large mixer bowl at medium speed of electric mixer until light and creamy. Combine flour, baking powder and salt. Add to creamed mixture, mixing on low speed until well blended. Cover dough and chill 1 hour, if desired, for easy rolling. Preheat oven to 375°F. Roll half of dough at a time. Roll out dough on lightly floured surface to 1/4-inch thickness. Using a cookie cutter, cut in desired shapes. Place on ungreased baking sheets. Roll leftover pieces. Sprinkle with coloured decorations or leave plain to decorate when cool. Bake at 375°F for 8 to 10 minutes, or until edges are light brown. (Time will vary with cookie size.) Cool slightly, then remove to cooling rack.

To make the cookie pops, I placed one Popsicle stick on top of one unbaked cookie, then applied some pressure to make an indentation into the dough. Bake as above. You will need another baked cookie in the same shape as the cookie with the Popsicle stick to make your cookie pop.



Spread the cookie with the Popsicle stick generously with Royal icing, then place the matched cookie on top to make a sandwich. Decorate one side of the cookie pop as desired.



The addition of the coconut oil made these cookies taste amazing. Just a hint of coconut is present when biting into these cookie pops -- an unexpected and delicious surprise for your Valentine.

I haven't had a stick stash in years and years but, looking at these cookies, I believe I'll have to start up again. These look wonderful. I bet my 3 grandsons would go crazy over these!
